It can currently be stated that moderate wine consumption is not only a pleasure, but also a beneficial dietary habit that benefits our health, preventing coronary heart disease, cancer, and even diabetes. 

Wine is a traditional element of our diet, also allowing us to discover the delights that gastronomy can offer. 

Enjoying a good wine requires some basic knowledge for tasting, such as the criteria to follow when choosing the wine, its ideal temperature, the prior opening of the bottle, or the type of glass to use. 

Choosing a Wine, It's common knowledge that food needs its own wine to be complete. This is why the choice of wine is so important, ensuring neither the dish nor the wine is altered by its companion.

So, if we are dealing with energetic dishes such as game or red meat, we should choose a full-bodied red. 

Fish, seafood, and lighter dishes will be perfect when accompanied by a white wine.

The ideal serving temperature for wine allows us to correctly perceive its aromas. If it's too cold, the aromatic molecules will evaporate, and if it's too warm, our palate and sense of smell will be dominated by alcoholic effluvia. 

Therefore, red wine should be served between 15° and 18° C, white wine between 7° and 10° C, and rosés between 10° and 12° C.

Allowing air contact with wine before consumption helps to eliminate some acidity, bitterness, or astringency from certain tannins. Decanters can even be used, especially for older wines, as this process helps separate any sediment that has precipitated at the bottom of the bottle. 

Choosing the right glass is crucial to appreciate all the wine's characteristics: color, aroma, and body. Balloon-shaped, rounded glasses with a tall stem and a narrower opening are best, as they allow wines to be swirled, helping them reveal their aromas.
